Description

The Rancid butter (smen) is handmade from the farm butter by washing and salting, then packed in earthenware pots and stored away from air and light for a period of at least six months.This preparation shows the following characteristics: absence of any heat treatment, salting constituting the sole conservation element. The storage conditions are also original (anaerobiosis and ambient temperature).
